This is a good beginning Cheese Making book. The recipes cover a wide variety of Cheese and they are reliable. The author does suggest pastuerization of milk, so if you are raw milk cheese maker you will want to follow the recipes, omitting pasteurization. Clear instructions are the strength of this book. It is a must have for cheese makers wanting to do this in their own kitchen.
